Ingredients
  

For the Salsa
  • 8 oz tomatillos husked and rinsed
  • 1 medium jalapeño stem removed, seeds optional for heat
  • 1 clove garlic peeled
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper freshly ground

Method
 

Prepare the Tomatillos
  1. Husk the tomatillos by removing the outer papery skin. Rinse them under cold water to remove any stickiness.
  2. Cut the tomatillos in half. This will help them cook evenly and blend smoothly.
Roast the Ingredients
  1. Heat a skillet over medium-high heat. Once hot, add the halved tomatillos and jalapeño, cut side down.
  2. Roast for about 5-7 minutes, or until the tomatillos are slightly charred and softened. This enhances their flavor.
  3. Remove from heat and let cool for a few minutes.
Blend the Salsa
  1. In a blender or food processor, combine the roasted tomatillos, jalapeño, garlic, red onion, cilantro, lime juice, salt, and black pepper.
  2. Blend until smooth, but still slightly chunky for texture. Taste and adjust seasoning if necessary.
Serve
  1. Transfer the salsa to a serving bowl. Let it sit for at least 10 minutes to allow the flavors to meld.
  2. Serve with tortilla chips, tacos, or as a topping for grilled meats.
