Prepare the Soup Base
- In a large pot, heat the olive oil over medium heat. This helps to sauté the onions and garlic, enhancing their flavors.
- Add the diced onion to the pot and sauté for about 5 minutes, or until the onion is translucent.
- Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant. Be careful not to burn the garlic.
- Add the black beans, kidney beans, corn, and diced tomatoes to the pot. Stir well to combine all the ingredients.
- Pour in the chicken broth and stir in the ranch seasoning and taco seasoning. These seasonings will infuse the soup with a rich, savory flavor.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes. This allows the flavors to meld together.
Serve the Soup
- Once the soup is ready, taste and adjust the seasonings if necessary. You can add more taco seasoning for extra flavor.
- Ladle the soup into bowls and top with shredded cheese, a dollop of sour cream, diced avocado, fresh cilantro, and tortilla chips for crunch.
- Serve hot and enjoy your delicious taco soup!
