Ingredients
  

For the Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can black beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes with green chilies
  • 2 cups chicken broth or vegetable broth
  • 1 packet ranch seasoning use your favorite brand
  • 1 tablespoon taco seasoning adjust to taste
For Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream for serving
  • 1 cup tortilla chips for garnish
  • 1 medium avocado diced, for garnish
  • ¼ cup fresh cilantro chopped, for garnish

Method
 

Prepare the Soup Base
  1. In a large pot, heat the olive oil over medium heat. This helps to sauté the onions and garlic, enhancing their flavors.
  2. Add the diced onion to the pot and sauté for about 5 minutes, or until the onion is translucent.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant. Be careful not to burn the garlic.
  4. Add the black beans, kidney beans, corn, and diced tomatoes to the pot. Stir well to combine all the ingredients.
  5. Pour in the chicken broth and stir in the ranch seasoning and taco seasoning. These seasonings will infuse the soup with a rich, savory flavor.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes. This allows the flavors to meld together.
Serve the Soup
  1. Once the soup is ready, taste and adjust the seasonings if necessary. You can add more taco seasoning for extra flavor.
  2. Ladle the soup into bowls and top with shredded cheese, a dollop of sour cream, diced avocado, fresh cilantro, and tortilla chips for crunch.
  3. Serve hot and enjoy your delicious taco soup!
