Stuffed Peppers with Rice and Beef

Ingredients
  

For the Stuffing
  • 1 lb ground beef Use lean beef for a healthier option.
  • 1 cup cooked rice White or brown rice can be used.
  • 1 small onion Finely diced.
  • 2 cloves garlic Minced.
  • 1 can diced tomatoes 14.5 oz can, drained.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Freshly ground.
  • 1 cup shredded cheese Cheddar or mozzarella.
For the Peppers
  • 4 large bell peppers Any color, tops cut off and seeds removed.
For the Sauce
  • 1 can tomato sauce 15 oz can.
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sugar To balance acidity.

Method
 

Prepare the Rice
  1. Cook rice according to package instructions. Set aside to cool slightly.
Cook the Beef Mixture
  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the cooked rice, diced tomatoes, oregano, basil, salt, and black pepper. Mix well and cook for an additional 5 minutes to combine flavors.
  4. Remove from heat and stir in half of the shredded cheese.
Prepare the Peppers
  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
Stuff the Peppers
  1. Spoon the beef and rice mixture into each bell pepper, packing it down gently.
  2. In a separate bowl, mix the tomato sauce, Italian seasoning, and sugar. Pour this sauce over the stuffed peppers.
  3. Sprinkle the remaining shredded cheese on top of the stuffed peppers.
Bake the Peppers
  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let cool for a few minutes before serving. Enjoy your delicious stuffed peppers!
