Preparation Steps
- Heat the olive oil in a large pot over medium heat.
- Sauté the onion, carrots, and celery until softened, about 5-7 minutes.
- Stir in the garlic and cook briefly until fragrant, around 1 minute.
- Add the split peas, ham bone, bay leaves, thyme, and pepper into the pot.
- Pour in the water or chicken broth and bring to a gentle boil.
- Reduce the heat and simmer partially covered for 75–90 minutes, stirring occasionally.
- Remove the ham bone, shred the meat, and return the tender pieces back to the soup.
- Season with salt to taste and serve hot.
