For the Soup
  • 1 cup Dried split peas (rinsed) rich in protein and fiber
  • 1 piece Ham bone (with meat) infuses with smoky flavor
  • 2 leaves Bay leaves to enhance flavor
  • 1 teaspoon Thyme adds earthy notes
  • 1 teaspoon Black pepper for a nice kick
For the Liquid
  • 8 cups Water or chicken broth using broth enhances flavor

Preparation Steps
  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the onion, carrots, and celery until softened, about 5-7 minutes.
  3. Stir in the garlic and cook briefly until fragrant, around 1 minute.
  4. Add the split peas, ham bone, bay leaves, thyme, and pepper into the pot.
  5. Pour in the water or chicken broth and bring to a gentle boil.
  6. Reduce the heat and simmer partially covered for 75–90 minutes, stirring occasionally.
  7. Remove the ham bone, shred the meat, and return the tender pieces back to the soup.
  8. Season with salt to taste and serve hot.
