Method
 

Preparation

  3. Roast the sweet potatoes in the oven for 40–50 minutes until tender.
  4. Mix the salsa by combining black beans, corn, diced red bell pepper, finely diced red onion, diced avocado, and lime juice in a bowl.
  5. Slice and fluff the roasted sweet potatoes open for stuffing.
  6. Top generously with the black bean salsa and serve warm.
