Cooking Instructions
  1. Season the shrimp with olive oil, chili powder, smoked paprika, cumin, garlic powder, salt, and black pepper.
  2. Cook the shrimp in a skillet over medium heat for about 3-4 minutes until they turn opaque and pink.
  3. Prepare the salsa by combining tomatoes, avocado, red onion, cilantro, and salt in a bowl.
  4. Assemble the quesadillas with cooked shrimp and cheese on half of a tortilla.
  5. Cook the quesadilla on medium heat for 2-3 minutes on each side until golden brown.
  6. Slice the quesadilla into wedges and serve warm with salsa.
