  • 4 large russet potatoes ideal for fluffy texture
For the Filling
  • 1 lb ground lamb or beef choose lamb for classic flavor
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup peas and carrots frozen
  • 2 tablespoon tomato paste
  • 1 cup beef broth low-sodium for lighter option
For the Mash
  • 2 tablespoon butter room temperature
  • 0.25 cup milk room temperature

Method
 

Preparation
  1. Preheat oven to 400°F (205°C).
  2. Bake potatoes for 45-50 minutes, until fork-tender.
  3. In a skillet over medium heat, brown ground lamb or beef for about 5-7 minutes.
  4. Add diced onion and minced garlic to the skillet, and cook for 3-5 minutes until translucent.
  5. Stir in tomato paste, beef broth, and peas and carrots; simmer for about 10 minutes.
  6. Cut baked potatoes in half and scoop out flesh into a bowl; mix with butter and milk until creamy.
  7. Fill potato skins with savory meat mixture and top with mashed potato. Bake for an additional 15-20 minutes.
