Preparation
- Preheat oven to 400°F (205°C).
- Bake potatoes for 45-50 minutes, until fork-tender.
- In a skillet over medium heat, brown ground lamb or beef for about 5-7 minutes.
- Add diced onion and minced garlic to the skillet, and cook for 3-5 minutes until translucent.
- Stir in tomato paste, beef broth, and peas and carrots; simmer for about 10 minutes.
- Cut baked potatoes in half and scoop out flesh into a bowl; mix with butter and milk until creamy.
- Fill potato skins with savory meat mixture and top with mashed potato. Bake for an additional 15-20 minutes.
