How to Make
- Preheat your oven to 400°F. Toss halved baby potatoes with 1 tablespoon olive oil, salt, pepper, and half of the minced garlic. Spread on sheet pan and roast for about 15 minutes.
- Drizzle pork chops with 1 tablespoon olive oil. Rub in remaining garlic, paprika, Italian seasoning, salt, and pepper, ensuring all sides are coated.
- After 15 minutes, add seasoned pork chops among the potatoes on the sheet pan. Return to oven and roast for an additional 15 minutes.
- Allow pork chops to rest for about 5 minutes before serving. Garnish with fresh herbs if desired.
