How to Make Red Wine Beef Stew
  1. Begin by seasoning your beef chuck with salt and pepper, then toss it in all-purpose flour.
  2. In a large pot, heat olive oil over medium-high heat. Brown the beef in batches.
  3. In the same pot, add chopped onion and minced garlic. Sauté until soft.
  4. Stir in tomato paste and cook for about a minute.
  5. Pour in red wine and scrape up browned bits. Simmer for 2-3 minutes.
  6. Return the beef to the pot, add beef broth, bay leaves, and dried thyme. Stir to combine.
  7. Cover the pot and let it simmer for 90 minutes.
  8. Add sliced carrots and cubed potatoes. Cover and simmer for an additional 30 minutes.
  9. Remove bay leaves, adjust seasoning if needed, and serve warm.
