How to Make Pistachio Pudding Cookies
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, instant pistachio pudding mix, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the large eggs and vanilla extract to the creamed mixture, beating until fully combined.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Gently fold in the white chocolate chips and chopped pistachios.
  7. With a cookie scoop or spoon, place dough balls on the prepared baking sheets, leaving space between each.
  8. Bake the cookies in the preheated oven for 10–12 minutes, until the edges are set but the centers are soft.
