Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Melt 1.5 cups of semi-sweet chocolate chips with 0.5 cup of unsalted butter in a microwave-safe bowl, stirring until smooth.
  3. Whisk together the melted chocolate mixture with 0.5 cup of granulated sugar, 0.25 cup of packed brown sugar, 2 large eggs, 1 teaspoon vanilla extract, and 0.5 teaspoon peppermint extract until smooth and creamy.
  4. Fold in 0.75 cup of all-purpose flour, 0.25 cup of cocoa powder, 0.5 teaspoon baking powder, and 0.25 teaspoon salt until just combined.
  5. Scoop the dough onto the prepared baking sheets, and top each cookie with 0.5 cup of crushed peppermint candies just before baking. Bake for 10–12 minutes.
