Directions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Melt 1.5 cups of semi-sweet chocolate chips with 0.5 cup of unsalted butter in a microwave-safe bowl, stirring until smooth.
- Whisk together the melted chocolate mixture with 0.5 cup of granulated sugar, 0.25 cup of packed brown sugar, 2 large eggs, 1 teaspoon vanilla extract, and 0.5 teaspoon peppermint extract until smooth and creamy.
- Fold in 0.75 cup of all-purpose flour, 0.25 cup of cocoa powder, 0.5 teaspoon baking powder, and 0.25 teaspoon salt until just combined.
- Scoop the dough onto the prepared baking sheets, and top each cookie with 0.5 cup of crushed peppermint candies just before baking. Bake for 10–12 minutes.
