  • 2 tablespoons Olive Oil
  • 1 medium Onion (diced) yellow or sweet onion for best results
  • 2 medium Carrots (diced)
  • 2 stalks Celery (diced)
  • 3 cloves Garlic (minced)
For the Tomatoes
  • 1 can Diced Tomatoes
  • 1 cup Tomato Sauce
  • 4 cups Beef Broth use low-sodium if preferred
For the Beans and Pasta
  • 1 can Great Northern Beans (drained and rinsed)
  • 1 can Kidney Beans (drained and rinsed)
  • 1 cup Ditalini Pasta (uncooked)
For Seasoning
  • 2 teaspoons Italian Seasoning
  • to taste Salt
  • to taste Black Pepper fresh ground is always best

How to Make Pasta e Fagioli Soup
  1. Begin by warming the olive oil in a large pot over medium heat.
  2. Add the ground beef to the pot, breaking it apart as it cooks. Sauté until browned, about 5-7 minutes.
  3. Toss in the diced onion, carrots, and celery. Cook for about 4-5 minutes, until softened.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Pour in the diced tomatoes, tomato sauce, and beef broth. Add the Italian seasoning, salt, and black pepper.
  6. Allow the soup to come to a gentle simmer and let it cook for about 20 minutes.
  7. Add the drained Great Northern and kidney beans along with the uncooked ditalini pasta. Simmer for another 10-12 minutes.
  8. Taste and adjust the seasoning if needed. Serve hot and enjoy!
