- Preheat the oven to 300°F (150°C).
- Pat the pork ribs dry with paper towels.
- Rub the ribs with olive oil on all sides.
- Mix the spices and brown sugar in a bowl.
- Coat the ribs evenly with the seasoning mixture.
- Arrange the ribs in a baking dish and cover tightly with foil.
- Roast covered for 90 minutes until tender.
- Uncover, increase the oven to 425°F (220°C), and roast for an additional 20-30 minutes.
- Brush with barbecue sauce if using and return to the oven.
- Rest the ribs for 10 minutes before serving.
