Falafel Ingredients
  • 1 can Chickpeas drained and rinsed
  • ½ cup Fresh parsley or cilantro
  • 2 cloves Garlic fresh
  • ½ medium Onion chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • ½ teaspoon Salt adjust to taste
  • ¼ teaspoon Black pepper fresh cracked
  • ¼ cup Flour chickpea flour for gluten-free
Bowl Ingredients
  • 1 cup Quinoa or couscous
  • 1 cup Hummus homemade or store-bought
  • 1 cup Cherry tomatoes halved
  • 1 medium Cucumber seedless
  • ¼ medium Red onion thinly sliced
  • ½ cup Kalamata olives pitted
Tahini Sauce Ingredients
  • ¼ cup Tahini unstirred variety
  • 2 tablespoons Lemon juice freshly squeezed
  • 1 clove Garlic minced
  • ¼ teaspoon Salt adjust to taste

Method
 

Preparation
  1. Blend the falafel ingredients in a food processor until a coarse mixture forms.
  2. Shape the mixture into small balls or patties, about the size of a golf ball.
  3. Heat a skillet with a drizzle of oil and cook them over medium heat for 5-7 minutes, turning until golden brown.
  4. Whisk together the tahini sauce ingredients in a bowl until smooth.
  5. Assemble your bowl starting with quinoa or couscous, hummus, falafel, and vegetables.
  6. Drizzle the tahini sauce over the top to finish off the dish.
