Making the Pudding
- In a medium bowl, combine chia seeds, coconut milk, honey or maple syrup, and vanilla extract (if using). Whisk gently until all ingredients are well blended.
- Allow the mixture to rest for 5 minutes to thicken.
- Cover and refrigerate for at least 4 hours or overnight.
Preparing the Fruit Layers
- While the pudding sets, peel and chop the ripe mango, then blend until smooth.
- Blend the chopped dragon fruit until smooth.
- Layer the thickened chia pudding with mango and dragon fruit puree in serving cups.
- Enjoy immediately or refrigerate until ready to serve.
