  • ¼ cup Chia seeds Packed with nutrients
  • 1 cup Coconut milk Use full-fat for creaminess
  • 2 tablespoons Honey or maple syrup Adjust sweetness to preference
  • 1 teaspoon Vanilla extract Optional for additional flavor
For the Fruit Layers
  • 1 medium Mango Choose ripe for best flavor
  • 1 medium Dragon fruit Adds crunch and sweetness

Method
 

Making the Pudding
  1. In a medium bowl, combine chia seeds, coconut milk, honey or maple syrup, and vanilla extract (if using). Whisk gently until all ingredients are well blended.
  2. Allow the mixture to rest for 5 minutes to thicken.
  3. Cover and refrigerate for at least 4 hours or overnight.
Preparing the Fruit Layers
  1. While the pudding sets, peel and chop the ripe mango, then blend until smooth.
  2. Blend the chopped dragon fruit until smooth.
  3. Layer the thickened chia pudding with mango and dragon fruit puree in serving cups.
  4. Enjoy immediately or refrigerate until ready to serve.
