  • 4 medium Russet potatoes chop into bite-sized pieces
  • 2 tablespoons Olive oil for roasting
For the Taco Filling
  • 1 pound Ground beef seasoned to taste
  • 2 tablespoons Taco seasoning mix with ground beef
For the Toppings
  • 1 cup Shredded cheddar cheese for topping
  • 1 cup Diced tomatoes fresh topping
  • 1 medium Avocado optional, or substitute with sour cream

Cooking Instructions
  1. Preheat your oven to 425°F (220°C). Arrange a baking sheet for the potatoes.
  2. Wash and chop the russet potatoes into bite-sized pieces. Toss them in olive oil and sprinkle with salt and pepper.
  3. Roast the potatoes in the oven for about 30 minutes until golden brown and crispy.
  4. Cook the ground beef in a skillet over medium heat for about 5-7 minutes, breaking it apart while browning, and add taco seasoning.
  5. Assemble the bowls by layering crispy potatoes with ground beef, topped with shredded cheddar cheese, diced tomatoes, and avocado.
