For the Roasted Potatoes
  • 2 lbs Potatoes diced
  • 3 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
For the Taco Filling
  • 1 lb Ground beef or turkey
  • 1 packet Taco seasoning
  • 0.5 cup Water
For the Toppings
  • 1 cup Shredded cheese
  • 0.5 cup Sour cream
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 0.25 cup Green onions sliced

Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet.
  2. Toss the diced potatoes with olive oil, garlic powder, paprika, and salt in a large bowl. Spread them evenly on the prepared baking sheet.
  3. Roast the potatoes for 30–35 minutes, flipping halfway through, until they are golden brown and tender.
  4. Cook the ground beef or turkey in a skillet over medium heat until browned, about 5-7 minutes.
  5. Add taco seasoning and water to the cooked meat, stirring well to combine. Let it simmer for about 5 minutes until the mixture thickens.
  6. Assemble your Loaded Potato Taco Bowls by layering the roasted potatoes as your base, then topping with the seasoned meat and finishing with cheese, sour cream, lettuce, tomatoes, and green onions.
