Method
 

Preparation

  3. Add the powdered erythritol to the bowl and mix until the batter is light and well combined.
  4. Incorporate the large egg and vanilla extract into the mixture, blending until fully combined.
  5. Whisk together the almond flour, baking powder, and salt in a separate bowl.
  6. Fold the dry ingredients into the wet mixture gently until a dough forms.
  7. Scoop the dough onto the prepared baking sheet using a spoon or cookie scoop and flatten slightly.
  8. Bake in the preheated oven for 10–12 minutes until just set but still soft in the center.
  9. Cool the cookies completely on a wire rack before serving.
