Ingredients
  

For the Soup Base
  • 1 tablespoon olive oil to sauté
  • 1 lb beef stew meat tender and hearty
  • 1 medium yellow onion diced
  • 2 medium carrots sliced
  • 2 stalks celery chopped
  • 3 cloves garlic minced
For the Vegetables
  • 1 medium zucchini chopped
  • 1 cup green beans trimmed
  • 1 can diced tomatoes 16 oz
  • 2 tablespoon tomato paste
For Seasoning
  • 4 cups beef broth low-sodium recommended
  • 2 teaspoon Italian seasoning
  • 1 leaf bay leaf remove before serving
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper adjust to taste

Method
 

Cooking Steps
  1. Heat olive oil in a large pot over medium-high heat. Add the beef and brown on all sides for about 5-7 minutes.
  2. Remove beef and add diced onion, sliced carrots, and chopped celery. Cook for about 5 minutes until softened.
  3. Stir in minced garlic and tomato paste, cooking for an additional minute.
  4. Return beef to the pot with diced tomatoes, beef broth, Italian seasoning, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer covered for 60 minutes.
  5. After beef is tender, add chopped zucchini and cut green beans. Continue to simmer uncovered for 15-20 minutes.
  6. Remove bay leaf, taste, and adjust seasoning as needed before serving.
