Ingredients
  

For the Beef Layer
  • 1 lb ground beef preferably 80/20 for flavor
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 cup beef broth low sodium
  • 1 cup frozen mixed vegetables optional
For the Mashed Potatoes
  • 2 lb russet potatoes peeled and cubed
  • ½ cup milk warm
  • 4 tablespoon butter unsalted, melted
  • 1 teaspoon salt to taste
  • ¼ teaspoon black pepper
  • ½ cup shredded cheddar cheese for mixing in
For the Topping
  • 1 cup shredded cheddar cheese for topping
  • ¼ cup fresh parsley chopped, for garnish

Method
 

Prepare the Beef Layer
  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  3. Season the mixture with salt, black pepper, and oregano. Stir to combine.
  4. Pour in the beef broth and add the frozen mixed vegetables if using. Bring to a simmer and cook for an additional 5 minutes, allowing the flavors to meld.
  5. Remove from heat and set aside.
Make the Mashed Potatoes
  1. In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot. Add warm milk, melted butter, salt, and black pepper.
  3. Mash the potatoes using a potato masher until smooth and creamy. Stir in the shredded cheddar cheese until melted and well combined.
Assemble the Casserole
  1. Preheat your oven to 375°F (190°C).
  2. In a greased 9x13 inch baking dish, spread the beef mixture evenly across the bottom.
  3. Carefully spoon the mashed potatoes over the beef layer, spreading them out evenly with a spatula.
  4. Sprinkle the remaining shredded cheddar cheese on top of the mashed potatoes.
Bake and Serve
  1. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden.
  2. Remove from the oven and let it cool for a few minutes before garnishing with fresh parsley.
  3. Serve warm and enjoy your hearty ground beef and potato casserole!

Notes

For a spicier version, consider adding diced jalapeños or a dash of hot sauce to the beef mixture. This casserole can be made ahead of time and refrigerated before baking; just add an extra 10-15 minutes to the baking time if cooking from cold.
