Make the Cookies
- Beat the softened butter and powdered sugar together in a large bowl until creamy and fluffy, about 2-3 minutes.
- Mix in the vanilla extract until combined.
- Combine the flour and salt in a separate bowl, then gradually add this mixture to your creamy butter mixture. Mix until the dough comes together.
- Fold in the rainbow sprinkles gently.
- Shape the dough into tablespoon-sized balls and place them on a baking sheet lined with parchment paper. Bake at 350°F (175°C) for 10–12 minutes.
Make the Frosting
- Beat together the frosting ingredients in a medium bowl until light and fluffy, around 3-4 minutes.
- Adjust the milk as needed to achieve your desired consistency.
Assemble the Cookies
- Spread a generous layer of frosting on the flat side of one cookie and top it with another cookie.
- Press gently to create a lovely cookie sandwich.
- Optional: Sprinkle a few extra rainbow sprinkles on the frosting before sandwiching.
