For the Cake
  • 2 cups all-purpose flour sifted
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 cup unsalted butter melted and cooled
  • 4 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups apples peeled, cored, and diced (about 3 medium apples)
For the Topping
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ cup chopped walnuts optional

Method
 

Prepare the Oven and Pan
  1. Preheat your oven to 350°F (175°C). This ensures that the cake bakes evenly.
  2. Grease a 9-inch round cake pan with butter or non-stick spray and line the bottom with parchment paper for easy removal.
Mix the Batter
  1. In a large mixing bowl, combine the sifted flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, and salt. Whisk together until well combined.
  2. In a separate bowl, whisk together the melted butter, eggs, and vanilla extract until smooth. This will help incorporate air into the batter, making the cake light.
  3. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Be careful not to overmix, as this can lead to a dense cake.
  4. Fold in the diced apples gently, ensuring they are evenly distributed throughout the batter.
Bake the Cake
  1. Pour the batter into the prepared cake pan and spread it evenly.
  2. In a small bowl, mix together the granulated sugar and ground cinnamon for the topping. Sprinkle this mixture evenly over the batter.
  3. If using, sprinkle the chopped walnuts on top of the cinnamon sugar.

Cool and Serve
