Ingredients
  

For the Salad
  • 2 large cucumbers sliced thinly
  • 1 cup cherry tomatoes halved
  • ½ small red onion thinly sliced
  • ¼ cup feta cheese crumbled
  • ¼ cup fresh parsley chopped
For the Herb Garlic Vinaigrette
  • ¼ cup extra virgin olive oil preferably cold-pressed
  • 2 tablespoons red wine vinegar or apple cider vinegar
  • 1 clove garlic minced
  • 1 teaspoon dijon mustard for added flavor
  • 1 teaspoon honey to balance acidity
  • ½ teaspoon dried oregano or fresh if available
  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper freshly ground

Method
 

Prepare the Salad
  1. Wash the cucumbers thoroughly under cold water. Slice them thinly using a sharp knife. Thin slices will absorb the vinaigrette better and provide a nice crunch.
  2. Halve the cherry tomatoes and add them to a large mixing bowl. Their sweetness will complement the cucumbers.
  3. Thinly slice the red onion and add it to the bowl. If the onion flavor is too strong, soak the slices in cold water for 10 minutes before adding.
  4. Add the crumbled feta cheese and chopped parsley to the bowl. These will add creaminess and freshness to the salad.
Make the Vinaigrette
  1. In a small mixing bowl, combine the minced garlic, dijon mustard, honey, red wine vinegar, oregano, salt, and black pepper. Whisk together until well combined.
  2. Slowly drizzle in the olive oil while whisking continuously. This emulsifies the vinaigrette, creating a smooth and creamy texture.
Combine and Serve
  1. Pour the vinaigrette over the salad ingredients in the large bowl. Toss gently to combine, ensuring all ingredients are coated with the dressing.
  2. Let the salad sit for about 5 minutes before serving. This allows the flavors to meld together.
