How to Make Crock Pot Chuck Roast
- Season the chuck roast on all sides with salt, black pepper, garlic powder, and onion powder.
- Heat olive oil in a skillet over medium-high heat. Sear the roast until browned all over—about 4-5 minutes per side.
- While the roast is searing, prepare the vegetables: slice the onion, mince the garlic, and chunk the carrots and potatoes.
- Once seared, place the roast on top of the vegetables in the crock pot.
- In a bowl, whisk together beef broth, Worcestershire sauce, and tomato paste. Pour over the roast and vegetables.
- Set the crock pot to low for 8-9 hours or high for 4-5 hours until fork-tender.
- For a thicker gravy, simmer some cooking liquid in a saucepan and whisk in cornstarch slurry until thickened.
