  • 2 cups Long-grain white rice uncooked
For the Broth
  • 4 cups Chicken broth low-sodium if desired

  • 1 small Onion diced
  • 3 cloves Garlic minced
For Creaminess
  • 2 tablespoons Unsalted butter can substitute with olive oil
  • 1 cup Heavy cream or half-and-half for lighter option
For Seasoning
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme

Method
 

How to Make Crock Pot Chicken and Rice
  1. Grease the slow cooker lightly with cooking spray or butter to prevent sticking.
  2. Layer the chicken breasts at the bottom of the crock pot, seasoning them with salt, black pepper, paprika, and dried thyme.
  3. Add the diced onion, minced garlic, uncooked long-grain white rice, and chicken broth on top of the chicken.
  4. Dot the mixture with unsalted butter, then cover the crock pot with its lid.
  5. Cook on LOW for 3-4 hours.
  6. Shred the chicken in the pot, mixing it well with the rice and broth, then stir in heavy cream.
  7. Adjust seasoning as needed before letting it rest for a few minutes.
