- Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
- Slice the zucchini into thin rounds, about ¼ inch thick, and pat them dry with a paper towel.
- Toss the zucchini slices in olive oil, making sure each piece is lightly coated.
- Mix together the breadcrumbs, grated parmesan, garlic powder, paprika, salt, and black pepper in a bowl.
- Coat the zucchini slices in the breadcrumb mixture, pressing gently to adhere.
- Arrange them in a single layer on the prepared baking sheets.
- Bake in your preheated oven for 20–25 minutes, flipping halfway through.
- Cool the zucchini chips slightly before serving.
