  • 3 cups cooked chicken diced or shredded
  • 4 cups fresh spinach or frozen
  • 3 tablespoon unsalted butter for sautéing
  • 0.5 cup onion chopped
  • 2 cloves garlic minced
For the Creamy Sauce
  • 2 tablespoon all-purpose flour
  • 1 cup milk whole or lower-fat
  • 0.5 cup heavy cream or half-and-half
  • 4 oz cream cheese softened
For the Toppings
  • 1.5 cups mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated
For Seasoning
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt adjust to taste
  • 0.5 teaspoon black pepper freshly cracked

Method
 

Directions
  1. Sauté onion and garlic in butter over medium heat until they soften, about 3-4 minutes.
  2. Whisk in flour, milk, and cream gradually until the mixture is smooth and starts to thicken, about 2-3 minutes.
  3. Melt in cream cheese and season with Italian seasoning, salt, and pepper. Stir continuously until fully combined.
  4. Stir in chicken and spinach until well combined.
  5. Transfer to a baking dish, top with mozzarella and Parmesan cheese, and bake at 350°F for 25-30 minutes.
