Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour sifted
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon plus extra for sprinkling
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup unsweetened applesauce homemade or store-bought
  • ½ cup granulated sugar
  • ¼ cup brown sugar packed
  • cup vegetable oil or melted coconut oil
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract

Method
 

Prepare the Oven and Muffin Tin
  1. Preheat your oven to 350°F (175°C). This ensures that the muffins bake evenly and rise properly.
  2. Grease a muffin tin or line it with paper liners to prevent sticking.
Mix Dry Ingredients
  1. In a large mixing bowl, whisk together the sifted flour, baking powder, baking soda, ground cinnamon, and salt. This helps to evenly distribute the leavening agents and spices.
Mix Wet Ingredients
  1. In another bowl, combine the applesauce, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well combined.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients. Gently fold the mixture using a spatula until just combined. Be careful not to overmix, as this can lead to dense muffins.
Fill Muffin Tin
  1. Scoop the batter into the prepared muffin tin, filling each cup about ⅔ full. This allows room for the muffins to rise.
  2. Sprinkle a little extra cinnamon on top of each muffin for added flavor.
Bake
  1. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. This ensures that the muffins are fully cooked.
Cool and Serve

Notes

For homemade applesauce, simply peel, core, and chop 4 medium apples, cook them with a splash of water until soft, then mash or blend until smooth.
