  • 1 cup sour cream
  • 1 medium onion finely diced
  • 1 teaspoon ground cumin

  • 8 medium flour tortillas
For the Toppings
  • 2 cups enchilada sauce
  • 1 cup shredded cheese cheddar or Monterey Jack

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Combine the cooked shredded chicken, sour cream, finely diced onion, ground cumin, and half of the shredded cheese in a bowl. Mix well.
  3. Warm the flour tortillas in the microwave or on a skillet until pliable.
  4. Fill each tortilla with a generous spoonful of the chicken mixture, then roll them tightly and place them seam-side down in the greased baking dish.
  5. Pour the enchilada sauce over the top, ensuring they're evenly coated. Then, sprinkle with the remaining cheese.
  6. Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.
  7. Rest the enchiladas briefly before serving.
