  • 2 cups cooked chicken diced or shredded
  • 2 cups cooked rice jasmine or brown rice recommended
  • 2 cups broccoli florets lightly cooked
  • 1 can cream of chicken soup
  • 1 cup milk whole or plant-based
  • 2 tablespoons butter melted
  • 1 teaspoon garlic powder
  • 1 cup shredded cheese cheddar or Colby Jack
  • to taste salt
  • to taste black pepper
For Topping
  • 1 cup additional cheese for topping

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and generously grease a casserole dish.
  2. Combine the cooked chicken, rice, and lightly cooked broccoli in a large mixing bowl.
  3. Whisk together the cream of chicken soup, milk, melted butter, garlic powder, salt, and black pepper in a separate bowl.
  4. Pour the creamy sauce over the chicken mixture and stir gently until everything is well-coated.
  5. Transfer the mixture to the prepared baking dish and spread it out evenly. Top with shredded cheese.
  6. Bake in the preheated oven for about 35 minutes until bubbly and lightly golden on top.
  7. Rest the casserole for a few minutes before serving.
