Ingredients

For the Pasta
  • 8 oz Fusilli pasta or any pasta of your choice
For the Dressing
  • ½ cup Mayonnaise use a good quality mayonnaise for best flavor
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 clove Garlic minced
  • ¼ cup Parmesan cheese grated
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon Dijon mustard
For the Salad
  • 4 cups Romaine lettuce chopped
  • ½ cup Cherry tomatoes halved
  • ¼ cup Croutons store-bought or homemade
  • ¼ cup Parmesan cheese shaved or grated for topping

Method

Cook the Pasta
  1. Bring a large pot of salted water to a boil. This helps to season the pasta as it cooks.
  2. Add the fusilli pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  3. Once cooked, drain the pasta in a colander and rinse under cold water to stop the cooking process. This also helps to prevent the pasta from sticking together.
Prepare the Dressing
  1. In a mixing bowl, combine the mayonnaise, lemon juice, minced garlic, grated Parmesan cheese, Worcestershire sauce, and Dijon mustard.
  2. Whisk together until smooth and creamy. Adjust the seasoning with salt and black pepper to taste.
Assemble the Salad
  1. In a large serving bowl, combine the chopped romaine lettuce, halved cherry tomatoes, and cooled pasta.
  2. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  3. Top with croutons and additional shaved Parmesan cheese for garnish.
  4. Serve immediately for the best texture, or refrigerate for up to 30 minutes to let the flavors meld.
