  • 6 pieces tortillas (cut into quarters) soft and chewy base

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Grease your favorite baking dish with a little oil or cooking spray.
  2. Brown the ground beef with the diced onion in a large skillet over medium heat for 5-7 minutes, draining excess fat.
  3. Sauté the garlic in the beef mixture for about 1 minute until fragrant. Stir in the diced tomatoes and enchilada sauce and let simmer.
  4. Layer the baking dish starting with a spoonful of the beef mixture, followed by tortillas and a handful of shredded cheese.
  5. Repeat the layers, finishing with a generous layer of cheese on top.
  6. Cover the dish with foil and bake for 25 minutes. Uncover and bake for an additional 10-15 minutes until cheese is bubbly and golden.
