How to Make Banana Oatmeal Bars
- Preheat oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper for easy removal later.
- Combine wet ingredients in a large mixing bowl. Start by mashing the ripe bananas, then whisk in the eggs, honey or maple syrup, melted coconut oil, and vanilla extract until everything is well blended.
- Mix dry ingredients in a separate bowl. In this bowl, combine the rolled oats, cinnamon, baking powder, and salt. Stir them together until evenly distributed.
- Combine mixtures gently. Pour the dry oat mixture into the bowl with the wet ingredients. Stir just until combined; avoid over-mixing.
- Spread into pan evenly. Transfer the mixture into your prepared baking pan, smoothing the top with a spatula.
- Bake until golden for about 30 minutes, or until the bars are set and lightly golden on top.
