For the Zucchini
  • 4 medium zucchini sliced into ¼ inch rounds

  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground
For the Topping
  • 1 cup Parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ cup bread crumbs preferably whole wheat for added texture

Method
 

Prepare the Zucchini
  1. Preheat your oven to 400°F (200°C). This temperature will help the zucchini cook evenly and become tender while allowing the topping to crisp up nicely.
  2. Wash the zucchini thoroughly under running water to remove any dirt. Slice the zucchini into ¼ inch rounds using a sharp knife on a cutting board.
  3. In a mixing bowl, combine the sliced zucchini with olive oil, salt, and black pepper. Toss until the zucchini is evenly coated. This step enhances the flavor and helps the topping adhere better.
Prepare the Topping
  1. In a separate bowl, mix together the grated Parmesan cheese, garlic powder, dried oregano, dried basil, and bread crumbs. This mixture will create a flavorful and crunchy topping for the zucchini.
Bake the Zucchini
  1. Line a baking sheet with parchment paper to prevent sticking. Arrange the zucchini slices in a single layer on the baking sheet.
  2. Sprinkle the cheese and breadcrumb mixture generously over the zucchini slices, ensuring each piece is well-covered. This will create a delicious crust as it bakes.
  3. Bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the topping is golden brown. Keep an eye on it to prevent burning.
