Prepare the Oven and Halibut
- Preheat your oven to 400°F (200°C). This high temperature will help create a nice crust on the halibut.
- Rinse the halibut fillets under cold water and pat them dry with paper towels. This step is important to ensure the crust adheres well.
- Place the halibut fillets in a baking dish and drizzle with olive oil. Season with salt and black pepper on both sides.
Make the Herb Crust
- In a mixing bowl, combine the panko breadcrumbs, chopped parsley, chopped dill, lemon zest, lemon juice, garlic powder, and paprika. Mix well to combine all the ingredients evenly.
- Add the melted butter to the breadcrumb mixture and stir until the breadcrumbs are evenly coated. This will help the crust brown nicely in the oven.
Assemble and Bake
- Spoon the herb crust mixture evenly over each halibut fillet, pressing down gently to ensure it sticks.
- Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the halibut flakes easily with a fork and the crust is golden brown.
Serve
- Once baked, remove the halibut from the oven and let it rest for a couple of minutes. This allows the juices to redistribute.
- Serve the baked halibut with lemon wedges on the side for an extra burst of flavor.
