Ingredients
  

For the Halibut
  • 4 fillets halibut about 6 oz each, skinless
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground
For the Herb Crust
  • ½ cup panko breadcrumbs for a crunchy texture
  • ¼ cup fresh parsley finely chopped
  • 2 tablespoons fresh dill finely chopped
  • 1 tablespoon lemon zest from about 1 lemon
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon butter melted

Method
 

Prepare the Oven and Halibut
  1. Preheat your oven to 400°F (200°C). This high temperature will help create a nice crust on the halibut.
  2. Rinse the halibut fillets under cold water and pat them dry with paper towels. This step is important to ensure the crust adheres well.
  3. Place the halibut fillets in a baking dish and drizzle with olive oil. Season with salt and black pepper on both sides.
Make the Herb Crust
  1. In a mixing bowl, combine the panko breadcrumbs, chopped parsley, chopped dill, lemon zest, lemon juice, garlic powder, and paprika. Mix well to combine all the ingredients evenly.
  2. Add the melted butter to the breadcrumb mixture and stir until the breadcrumbs are evenly coated. This will help the crust brown nicely in the oven.
Assemble and Bake
  1. Spoon the herb crust mixture evenly over each halibut fillet, pressing down gently to ensure it sticks.
  2. Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the halibut flakes easily with a fork and the crust is golden brown.
Serve
  1. Once baked, remove the halibut from the oven and let it rest for a couple of minutes. This allows the juices to redistribute.
  2. Serve the baked halibut with lemon wedges on the side for an extra burst of flavor.

Notes

For best results, use fresh halibut. If using frozen, ensure it is fully thawed before cooking. You can substitute other firm white fish like cod or haddock if halibut is unavailable.
