How to Make Baked Feta Pasta
- Preheat your oven to 400°F (200°C).
- Toss cherry tomatoes in a baking dish with olive oil, minced garlic, dried oregano, salt, and black pepper.
- Place the block of feta cheese right in the center of the tomatoes and drizzle with a little extra olive oil.
- Bake in the preheated oven for 25-30 minutes, or until the tomatoes burst and the feta cheese softens.
- Cook the pasta according to package instructions until al dente, reserving ½ cup of the pasta water before draining.
- Mash the baked feta cheese and roasted tomatoes into a creamy sauce.
- Combine the mashed mixture with the pasta and the reserved pasta water, then stir in the freshly chopped basil just before serving.
