  • 7-8 oz feta cheese swap with goat cheese for a tangy twist
  • 2 cups cherry tomatoes substitute with diced bell peppers if needed
  • 3 cloves garlic minced or roast whole for a milder taste
  • 0.25 cup olive oil or avocado oil for a different flavor
  • 1 teaspoon dried oregano consider fresh oregano for brighter taste
  • 0.5 teaspoon red pepper flakes optional, leave out for milder dish
  • 0.25 teaspoon salt adjust to taste
  • 0.5 teaspoon black pepper preferably freshly cracked
For Garnishing
  • 0.25 cup fresh basil chopped, or substitute with parsley or arugula

Method
 

How to Make Baked Feta Pasta
  1. Preheat your oven to 400°F (200°C).
  2. Toss cherry tomatoes in a baking dish with olive oil, minced garlic, dried oregano, salt, and black pepper.
  3. Place the block of feta cheese right in the center of the tomatoes and drizzle with a little extra olive oil.
  4. Bake in the preheated oven for 25-30 minutes, or until the tomatoes burst and the feta cheese softens.
  5. Cook the pasta according to package instructions until al dente, reserving ½ cup of the pasta water before draining.
  6. Mash the baked feta cheese and roasted tomatoes into a creamy sauce.
  7. Combine the mashed mixture with the pasta and the reserved pasta water, then stir in the freshly chopped basil just before serving.
