Chia Pudding
  • ½ cup Chia seeds packed with omega-3 fatty acids and fiber
  • 2 cups Milk or substitute with almond or oat milk
  • 2 tablespoons Maple syrup adds natural sweetness
  • 1 teaspoon Vanilla extract enhances flavor
Spiced Apples
  • 2 cups Apples diced, Granny Smith recommended
  • 1 tablespoon Maple syrup for sweetness
  • 1 teaspoon Ground cinnamon for autumn flavor
Oat Crumble
  • 1 cup Rolled oats for crunch
  • 2 tablespoons Butter or coconut oil for richness

Method
 

Preparation
  1. In a large bowl, whisk chia seeds, milk, maple syrup, and vanilla extract until well combined. Refrigerate for at least 15 minutes or until thickened.
  2. In a medium saucepan over medium heat, cook diced apples with 1 tablespoon of maple syrup and ground cinnamon for about 5-7 minutes until tender.
  3. In a separate skillet, melt butter or coconut oil over medium heat. Add rolled oats and remaining cinnamon, toasting for about 3-4 minutes until golden brown.
  4. Layer chia pudding with spiced apples and top with toasted oat crumble.
