For the Zucchini
  • 3 medium Zucchini thinly sliced
  • 1 tablespoon Olive oil
For the Cashew Filling
  • 1 cup Raw cashews soaked
  • 2 cloves Garlic
  • 2 tablespoons Lemon juice
  • ¼ cup Nutritional yeast
  • 1 teaspoon Salt
  • ¼ teaspoon Black pepper
For the Spinach and Sauce
  • 2 cups Spinach chopped
  • 2 cups Marinara sauce

Method
 

How to Make Vegan Zucchini Rollatini
  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into thin strips. Lay them out on a baking sheet and lightly roast them in the oven for about 10 minutes.
  3. Blend the soaked cashews, garlic, lemon juice, nutritional yeast, salt, and pepper together until smooth and creamy.
  4. Fold in the chopped spinach gently into the cashew mixture.
  5. Roll a generous spoonful of the filling into each zucchini slice.
  6. Arrange the rolled zucchini in a baking dish and pour marinara sauce generously over the top.
  7. Bake for about 20–25 minutes, or until warm and slightly golden.
