How to Make Vegan Zucchini Rollatini
- Preheat your oven to 375°F (190°C).
- Slice the zucchini lengthwise into thin strips. Lay them out on a baking sheet and lightly roast them in the oven for about 10 minutes.
- Blend the soaked cashews, garlic, lemon juice, nutritional yeast, salt, and pepper together until smooth and creamy.
- Fold in the chopped spinach gently into the cashew mixture.
- Roll a generous spoonful of the filling into each zucchini slice.
- Arrange the rolled zucchini in a baking dish and pour marinara sauce generously over the top.
- Bake for about 20–25 minutes, or until warm and slightly golden.
