How to Make Vegan Lentil Mushroom Stew
  1. Heat oil in a large pot over medium heat.
  2. Sauté onion until soft, about 5 minutes. Then, add garlic and mushrooms, continuing to sauté until browned.
  3. Add carrots and celery, cooking for 3 minutes.
  4. Incorporate tomato paste and spices, stirring well. Cook until fragrant.
  5. Pour in lentils, broth, water, bay leaf, and soy sauce. Stir well and bring to a gentle boil.
  6. Simmer covered for 30–35 minutes.
  7. Remove the bay leaf, season to taste, and simmer uncovered to thicken if needed.
