How to Make Thai Coconut Red Lentil Soup
  1. Heat coconut oil in a large pot over medium heat.
  2. Saute the chopped onion until soft and translucent, about 5 minutes.
  3. Stir in minced garlic and grated ginger, cooking until fragrant, about 1 minute.
  4. Add red Thai curry paste, turmeric, and ground cumin; toast briefly for a minute.
  5. Introduce the red lentils and vegetable broth, bringing everything to a simmer.
  6. Simmer until the lentils are very soft, stirring occasionally, for about 20 minutes.
  7. Stir in the coconut milk and let it cook until creamy, around 5 minutes.
  8. Season with fresh lime juice, salt, and pepper to taste. Serve hot!
