How to Make Thai Chicken Coconut Curry
  1. Heat a skillet over medium heat and add the oil. Let it warm until shimmering, about 1-2 minutes.
  2. Cook the chopped onion until softened, around 3-4 minutes.
  3. Add minced garlic and grated ginger to the skillet; cook until fragrant, about 1 minute.
  4. Stir in the red curry paste and let it cook briefly for about 1-2 minutes.
  5. Add the chicken pieces and stir to coat them well. Cook for about 5-6 minutes.
  6. Pour in the coconut milk and bring to a simmer. Let it bubble gently for about 10-12 minutes.
  7. Add the sliced bell peppers and continue cooking for another 3-4 minutes.
  8. Season the curry with fish sauce or soy sauce and finish with lime juice.
