Directions
  1. Heat olive oil in a skillet over medium-high heat until shimmering.
  2. Add sweet potatoes to the skillet and season generously with salt and black pepper. Cook undisturbed for about 10 minutes.
  3. Cook sweet potatoes until golden and crisp. Stir for even cooking.
  4. Incorporate diced onion and bell pepper. Cook for about 5-7 minutes until softened.
  5. Stir in minced garlic and smoked paprika, sauté for a minute.
  6. Adjust seasoning to taste and serve hot, optionally garnished with fresh herbs.
