Method
 

How to Make Spanish Rice
  1. Heat the vegetable oil in a medium saucepan over medium heat.
  2. Add the long-grain white rice and toast it, stirring frequently, until it’s lightly golden for 2-3 minutes.
  3. Stir in the finely diced onion and cook until it softens and becomes translucent, around 3-4 minutes.
  4. Toss in the minced garlic and cook for about 30 seconds until fragrant.
  5. Add the tomato paste and cook for 2-3 minutes, stirring until it deepens in color.
  6. Pour in the chicken or vegetable broth, water, ground cumin, paprika, and salt. Stir and bring to a boil.
  7. Once boiling, reduce heat to low, cover, and let it simmer for about 20 minutes or until liquid is absorbed.
  8. After removing from heat, let it rest covered for about 5 minutes. Fluff with a fork and serve warm.
