How to Make Spanish Rice
- Heat the vegetable oil in a medium saucepan over medium heat.
- Add the long-grain white rice and toast it, stirring frequently, until it’s lightly golden for 2-3 minutes.
- Stir in the finely diced onion and cook until it softens and becomes translucent, around 3-4 minutes.
- Toss in the minced garlic and cook for about 30 seconds until fragrant.
- Add the tomato paste and cook for 2-3 minutes, stirring until it deepens in color.
- Pour in the chicken or vegetable broth, water, ground cumin, paprika, and salt. Stir and bring to a boil.
- Once boiling, reduce heat to low, cover, and let it simmer for about 20 minutes or until liquid is absorbed.
- After removing from heat, let it rest covered for about 5 minutes. Fluff with a fork and serve warm.
