Ingredients
  

For the Salad
  • 2 cups Fresh pineapple cubed
  • 1 large Cucumber sliced
  • ½ medium Red onion thinly sliced
  • ¼ cup Fresh mint chopped
For the Dressing
  • 2 tablespoons Lime juice freshly squeezed
  • 1 tablespoon Honey
  • ½ teaspoon Sea salt to taste

Method
 

Preparation
  1. In a large mixing bowl, gently toss together the cubed pineapple, sliced cucumber, and thinly sliced red onion.
  2. In a separate bowl, whisk together the fresh lime juice, honey, and sea salt until well combined.
  3. Pour the zesty dressing over the fruit and vegetable mixture. Toss gently to coat.
  4. Just before serving, fold in the freshly chopped mint.
