- Preheat your oven to 350°F (175°C) and grease a baking dish with butter or non-stick spray.
- Combine all the ingredients in a large mixing bowl: the Jiffy corn muffin mix, whole kernel corn, creamed corn, sour cream, melted butter, and eggs. Stir gently until just mixed; a few lumps are perfectly okay!
- Pour the batter into your prepared baking dish and smooth the top with a spatula.
- Bake in the oven for about 45 minutes, or until the center is set and the top is golden brown.
- Rest the casserole for 5-10 minutes before serving.
