  2. Stuff the Chicken: Gently fill each pocket with slices of brie cheese, dried cranberries, and sprinkle some fresh thyme. Be careful not to overstuff, so you can easily secure them later.
  3. Secure the Chicken: If needed, use toothpicks to hold the openings closed.
