How to Make Cranberry Brie Stuffed Chicken
- Prepare the Chicken: Begin by cutting a pocket into each chicken breast. Take your time to ensure it’s deep but not piercing through, then season both sides generously with salt and pepper.
- Stuff the Chicken: Gently fill each pocket with slices of brie cheese, dried cranberries, and sprinkle some fresh thyme. Be careful not to overstuff, so you can easily secure them later.
- Secure the Chicken: If needed, use toothpicks to hold the openings closed.
- Sear the Chicken: Heat the olive oil and butter in a large skillet over medium-high heat. Sear the chicken for about 4-5 minutes on each side until golden brown and crispy.
