Preparation Steps
  1. Preheat your oven to 325°F (165°C). Season the beef roast with salt and black pepper.
  2. Sear the beef in 2 tablespoons of olive oil in a large, oven-safe pot over medium-high heat for 3-5 minutes per side.
  3. Remove the beef from the pot and set aside. Sauté chopped onion and minced garlic until softened and fragrant, about 3-4 minutes.
  4. Combine cranberries, balsamic vinegar, beef broth, and honey in the pot and stir well.
  5. Return the beef to the pot and nestle the fresh rosemary around it.
  6. Cover and roast in the oven for about 3 hours, or until the beef is fork-tender.
  7. Remove the beef and allow it to rest. Simmer the remaining sauce for about 10 minutes.
  8. Slice the beef against the grain and serve with the cranberry balsamic sauce drizzled over the top.
