  • 1 teaspoon honey adds sweetness
  • 1 teaspoon curry powder enhances curry flavor
  • 0.5 teaspoon turmeric for color and benefits
  • 0.5 teaspoon salt to season sauce
  • 0.25 teaspoon pepper for warmth

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Season the cod fillets with salt and pepper. Place them in a baking dish.
  3. Whisk together the coconut milk, curry paste, minced garlic, grated ginger, lime juice, honey, curry powder, turmeric, and additional seasoning until smooth.
  4. Pour the coconut curry sauce over the seasoned cod, ensuring each fillet is well covered.
  5. Add bell peppers or cherry tomatoes around the fillets if desired.
  6. Bake for 15-22 minutes, until the cod flakes easily with a fork.
  7. Garnish with chopped cilantro and serve warm with rice or naan.
