For the Zucchini Boats
  • 4 medium zucchini freshly picked for the best flavor and texture

  • 1.5 cups marinara sauce choose a high-quality sauce for authentic Italian taste
For the Cheese Topping
  • 1 cup mozzarella cheese, shredded for that gooey, melty goodness on top
  • 0.5 cup Parmesan cheese, grated adds a delightful sharpness that complements the dish perfectly

Equipment

  • Oven
  • Baking Sheet
  • Large bowl

Method

How to Make Chicken Parmesan Zucchini Boats
  1. Preheat your oven to 375°F (190°C). Halve the zucchinis lengthwise, then scoop out a bit of the center to create a boat shape, leaving enough flesh for flavor and structure. Sprinkle with salt and pepper.
  2. In a large bowl, combine the shredded chicken and marinara sauce until evenly coated. Stir it well!
  3. Take generous spoonfuls of the chicken filling and pack them into each zucchini half.
  4. Evenly sprinkle the shredded mozzarella and grated Parmesan over the stuffed zucchini.
  5. Place your zucchini on a baking sheet and bake for about 35 minutes, or until the zucchini is tender and the cheese is bubbly and golden brown.
