Ingredients
  

For the Pasta
  • 12 oz pasta use your favorite shape, like penne or spaghetti
For the Sausage
  • 1 lb Italian sausage try hot or mild based on your preference
For the Vegetables
  • 1 medium onion sliced
  • 2 medium bell peppers sliced, mix of colors recommended
  • 1 medium zucchini sliced
  • 3 cloves garlic minced
For the Sauce
  • 1.5 cups crushed tomatoes

Method
 

Prep and Cook
  1. Start by cooking the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve a cup of pasta water.
  2. In a large skillet over medium heat, add the Italian sausage. Cook until browned and crispy, breaking it apart with a spatula, about 5-7 minutes.
  3. Add sliced onion, bell peppers, and zucchini to the skillet with the sausage. Cook for about 5 minutes, stirring occasionally, until the veggies start to soften.
  4. Stir in the minced garlic and cook for an additional minute. Pour in the crushed tomatoes and stir to combine. Let simmer for about 3-5 minutes.
  5. Add the cooked pasta to the skillet with the sausage and vegetable mixture. Toss gently to combine, adding reserved pasta water if needed. Cook for another minute.
  6. Plate your pasta and garnish with freshly grated Parmesan cheese if desired. Enjoy!
