Prep and Cook
- Start by cooking the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve a cup of pasta water.
- In a large skillet over medium heat, add the Italian sausage. Cook until browned and crispy, breaking it apart with a spatula, about 5-7 minutes.
- Add sliced onion, bell peppers, and zucchini to the skillet with the sausage. Cook for about 5 minutes, stirring occasionally, until the veggies start to soften.
- Stir in the minced garlic and cook for an additional minute. Pour in the crushed tomatoes and stir to combine. Let simmer for about 3-5 minutes.
- Add the cooked pasta to the skillet with the sausage and vegetable mixture. Toss gently to combine, adding reserved pasta water if needed. Cook for another minute.
- Plate your pasta and garnish with freshly grated Parmesan cheese if desired. Enjoy!
